Nutrition Emphasis Week, a campus tradition since 1966, will
be held Tuesday, Oct. 3 and Wednesday Oct. 4. The department
of nutritional sciences planned this year’s events with
the theme “Vitamin D - Beyond Bone.” Catherine
Peterson, assistant professor of nutritional sciences, discussed
the purpose of the two-day event. “It’s meant
to showcase our department to the entire university community
as well as Columbia,” she said.
To achieve this goal, the department organized a poster session
and two lectures for students, faculty and Columbians to learn
more about developing nutritional research across campus.
The 17th annual poster session takes place Tuesday and will
consist of 19 posters compiled by 57 authors. That same afternoon,
audiences will listen to Dr. Margherita Canorna’s lecture
titled “Role of Vitamin D on the Prevention & Treatment
of Autoimmunity.”
These two events were organized specifically toward those
involved in scientific fields. However, Peterson said the
third activity is geared towards an audience with or without
previous scientific knowledge. “We choose at least one
of the speakers to talk beyond just science,” she said.
This year that speaker is Dr. Michael Holick from Boston University.
According to Peterson, Holick’s lecture titled “Vitamin
D: A D-Lightful Story,” will be informative as well
as entertaining.
Food for the Twenty-first Century, or F21C, as well as other
departments and divisions have funded these events across
campus. For more information on vitamin D, be sure to stop
by the events and learn about current research on campus as
well as across the nation.
